Classic Cheese Fondue
🛒Ingredients (Grocery List)
1 Garlic Cloves
2 1/4 cups Dry White Wine
1 1/2 pounds Gruyère or Swiss Cheese, thinly sliced
1/4 cup Kirsch
2 pinches of Baking Soda
1 tsp Potato Starch or Cornstarch
2 pinches of Freshly Grated Nutmeg
Salt and Pepper
Crusty Bread cubes

🥣Instructions
1. Rub the inside of a Cheese Fondue pot or medium flameproof casserole with the Garlic. Add the Garlic. Pour in the Wine and bring to a simmer over medium heat. Gradually add the Cheese, stirring constantly with a wooden spoon, just until the Cheese is melted and smooth. Stir in the Kirsch, Baking Soda, and Potato Starch or Cornstarch and season with Nutmeg, Salt and Pepper.
2. Set the pot on a hot plate on the table and pass a basket of Bread. Let guests spear their own Bread cubes and twirl them in the warm melted Cheese.
💡Tips
A fondue supper doesn’t require a first course, but if you would like to serve one, pick something simple like crudités or a light soup. To finish the meal, choose a fruit dessert or, better yet, ice cream. For a beverage, pour a dry white wine.
You might also like to set out boiled new Potatoes, Salami, and Cornichons for serving.
Make the Fondue with two different kinds of cheeses, say half Gruyère, half Emmental.
The Potato Starch or Cornstarch helps keep the Fondue from separating. If it does separate, try rescuing it with a splash of vinegar.
