Chicken Soup with Angel Hair Pasta

🛒Ingredients (Grocery List)

  • 5 cups Chicken Broth

  • 3/4-pound skinless, boneless Chicken cutlets, thinly sliced

  • 1/2 cup Crème Fraîche or Heavy Cream

  • 4 ounces Angel Hair Pasta

  • 1/3 cup Madeira

  • 2 Boston Lettuce Leaves, thinly sliced

  • Salt and Pepper

🥣Instructions

1. In a large saucepan, bring the Chicken Broth to a boil over medium-high heat. Add the Chicken and Crème Fraîche, reduce the heat to low, and simmer for 3 minutes. Add the pasta and cook, stirring, for 2 minutes. Stir in the Madeira and pour the soup into a tureen or bowls. Garnish with the lettuce and serve.

💡Tips

  • Angel Hair Pasta is a long and extremely fine kind of Vermicelli, so the cooking time is very fast. Any delicate strands of Pasta can be substituted.
