Creamy Caper Sauce

5 tbsp Butter
3 tbsp all-purpose Flour
2 cups Fish Broth
Pepper
1 large Egg Yolk
2 tbsp small Capers

🥣Instructions
1. In a medium saucepan, melt 3 tablespoons of the Butter over medium heat. Whisk in the Flour until it starts foaming. Whisk in the Broth. Season with Pepper. Bring to a boil, whisking, then reduce the heat to very low and cook for 10 minutes.
2. Meanwhile, in a cup, whisk the Egg Yolk with the Capers. Whisk in a little of the hot sauce, then whisk this mixture into the remaining sauce. Do not let it boil.
3. Remove the pan from the heat and whisk in the remaining 2 tablespoons of Butter until it melts creamily. Serve at once.
💡Tips
Some cooks like to enrich this Caper Sauce with a little Milk. Personally, I prefer to whisk in Crème Fraîche. It’s not essential, though, if you don’t like it.
Serve with poached fish.
