Salad with Warm Goat Cheese

â…“ pound sliced Bacon
4 (7 ounces) slices of round Goat Cheese, such as Crottin de Chavignol, halved horizontally
4 large handfuls of Salad Greens
3 tbsp Red Wine Vinegar
1 tbsp Dijon Mustard
2 tbsp finely minced Fresh Basil
1/3 Cup Olive Oil
1 cup Cherry or Grape Tomatoes, cut in half
8 slices French Baguette, 1/2” thick
Salt and Pepper

🥣Instructions
1. Cut the Bacon into ½-inch pieces and add to the skillet. Cook over medium heat until crisp. Remove the Bacon with a slotted spoon and drain on paper towels.
2. Wisk together the Basil, Mustard, Vinegar and Olive Oil. Season with Salt and Pepper.
3. Heat the broiler. Brush each Baguette slice with Olive Oil. Place the Goat Cheese on each slice of Bread. Transfer the Cheese Toasts to a baking sheet and broil on the top shelf of the Oven until the Cheese is soft and a little runny, about 2-3 minutes.
4. Toss together the Salad Greens with the Tomatoes and the Bacon. Drizzle some of the Basil Vinaigrette (you may not use all the Vinaigrette) and toss to Coat. Transfer the Salad Mix on 4 individual plates.
5. Serve the Salad with 2 pieces of Warm Toasted Goat Cheese on the top of the Salad just before serving.

You can add Raisins, and thinly sliced Apples to the Salad.
The Goat Cheese can be replaced by a Camembert or Brie Cheese.
