Ravigote Sauce

🛒Ingredients (Grocery List)

  • 1 tbsp Red Wine Vinegar

  • 3 tbsp Virgin Olive Oil

  • Salt and Pepper

  • 1 Shallot or small Onion, finely chopped

  • 2 tbsp mixed chopped Chervil, Tarragon, and Chives

  • 1 tsp small Capers

🥣Instructions

1. In a medium bowl, whisk the Vinegar with the Oil and season with Salt and Pepper. Beat in the Shallot or Onion, Herbs, and Capers.

💡Tips

  • Serve this pungent vinaigrette with calf’s head or feet, cold meats, or fish.

  • Cut the herbs into a glass using scissors. It’s simple and the Herbs stay fresh longer.
