Classic Cheese Puffs
🛒Ingredients (Grocery List)
5 tbsp Butter, diced
2/3 cup of Water
1/2 tsp Salt
2/3 cup all-purpose Flour
3 Large Eggs
1 1/2 cups Shredded Gruyère or Swiss Cheese
Pepper
Butter for Brushing
1 1/2 ounces Gruyère Cheese; cut into 1/4-inch dice

🥣Instructions
1. Preheat the oven to 400 degrees. Brush 2 baking sheets with Butter.
2. Make the Choux Pastry: In a saucepan, bring 2/3 cup of Water the Butter, and the Salt to a boil. When the Butter melts, remove the pan from the heat, add all the Flour at once, and beat until the dough is smooth and pulls away from the pan to form a ball. Off the heat, add the Eggs, 1 at a time, beating well after each addition. Beat in the Shredded Cheese and Pepper.
3. Drop 1 tablespoon of the batter onto the baking sheet sheets and dot with the Cheese dice. Transfer to the oven and bake until puffed and golden, about 45 minutes, reducing the oven temperature to 350 degrees after 20 minutes. Transfer to a rack to cool slightly. Serve warm.
💡Tips
The baked Gougères should feel firm when you touch them. If not, return to a 225 degrees oven for a few minutes.
These Cheese Puffs can be served warm or at room temperature, but frankly, they are better warm when the insides are still a little creamy.
