Bake Ham Steaks with Creamy Spinach

4 Ham Steaks, about 1/2 pound each, cut 1/4 inch thick
1/4 cup Port
3 1/2 pounds Spinach, tough stems removed
2 tbsp Butter
3 tbsp Crème Fraîche or Heavy Cream
Salt and Pepper

🥣Instructions
1. Preheat the oven to 150 degrees. Spread the Ham slices in a gratin dish. Add the Port, cover with foil, and bake for 20 to 25 minutes.
2. Meanwhile, bring a large pot of Water to a boil. Add the Spinach and cook for 5 minutes. Drain in a colander and press on the Spinach to remove as much as much water as possible. Coarsely chop the Spinach.
3. In a flameproof casserole, melt the Butter over medium-high heat. Add the Spinach and cook for 2 to 3 minutes, stirring, to dry it out a bit. Add the Crème Fraîche and season with Salt and Pepper. Reduce the heat to low, cover, and cook for 10 minutes.
4. Spread the Spinach on a large, warmed serving dish. Arrange the Ham slices on top, pour in the cooking juices, and serve.
💡Tips
It takes some effort to clean, blanche, drain, and cook all the Spinach, but this dish is easily made by a beginner. Or you could try a little less baby Spinach, which usually doesn’t need to be stemmed or cleaned, though it is more expensive.
Instead of Port, you can use another sweet or fortified Wine, such as Madeira, Muscat, or Vermouth.
