Pork Roast with Stuffed Apples

12 Pitted Prunes
1 1/2 pounds Boneless Sirloin or Tenderloin Roast
Salt and Pepper
8 tbsp (1 stick) Butter
2 pounds Apples

🥣Instructions
1. In a bowl, soak the Prunes in Water to cover overnight.
2. Preheat the oven to 400 degrees. Make a deep lengthwise slit in the Pork, leaving about 1 inch of meat attached. Open the Roast and season with Salt and Pepper. Arrange a few Prunes in a row along the slit. Close the Roast and tie at 2-inch intervals with kitchen string. Season the Pork all over with Salt and Pepper.
3. In a large skillet, melt 2 tablespoons of Butter over medium-high heat. Add the Pork and cook until nicely browned on all sides. Transfer to a roasting pan and dot with1 tablespoon of Butter. Transfer to the oven and roast for 10 minutes. Pour 3/4 cup of boiling Water around the Roast and roast for 15 minutes basting the meat occasionally.
4. Meanwhile, peel the Apples. Using a sharp knife, cut a thin slice from the top and bottom of each Apple. Working from the stem end and using a corer or a sharp knife, remove the interior core and seeds to within 1/2 inch of the bottom. Add 1 or 2 Prunes to each Apple and dot with the remaining 2 tablespoons of Butter. Arrange the Apples around the Pork and roast for 25 to 30 minutes.
5. Transfer the Pork to a cutting board and remove the string. Cover loosely with foil and let stand 10 minutes. Carve the Pork and arrange on a warmed platter. Serve with the stuffed Apples and pan juices.
