French Gazpacho Soup
🛒Ingredients
1 small English Cucumber, peeled and thinly sliced
Salt
2 pounds ripe Tomatoes, peeled, seeded, and coarsely chopped
Pepper
2 small spring Onions, finely chopped
A small handful of finely chopped Parsley, Chervil, and Chives
Juice of 1 Lemon

🥣Instructions
1. In a colander, sprinkle the Cucumber slices with Salt and let drain for 1 hour in the refrigerator. Squeeze out as much water as possible from the Cucumber slices and pat dry with paper towels.
2. Puree the Tomatoes using a food mill or food processor. Season with Salt and Pepper.
3. In a bowl, combine the Tomatoes with the Cucumber, Onions, Herbs, and Lemon Juice. Season with Salt and Pepper. Cover and refrigerate until cold, 3 to 4 hours. Serve chilled.
💡Tips
If the Tomatoes don’t release enough liquid, you can add a little cold Water or Tomato Juice and adjust the seasoning.
The proportions of Vegetables and Herbs can vary according to your taste and availability. If you don’t have enough fresh Tomatoes, use Tomato Juice.
