Stuffed Tomatoes with Tuna, Eggs and Mayo
🛒Ingredients (Grocery List)
4 medium Tomatoes
Salt
2 tbsp Mayonnaise
3 1/2 ounces oil-packed Tuna, flaked
2 Hard-Boiled Eggs, chopped
1 tsp Vinegar
Mixed chopped Parsley, Chervil, Chives, and Tarragon Leaves
Pepper

🥣Instructions
1. Cut a thin slice off the top of each Tomato. Using a spoon, hollow out the insides, leaving a sturdy shell. Sprinkle with Salt and turn upside down on a plate to drain.
2. In a bowl, combine the Tuna, Eggs, Vinegar, Mayonnaise and Herbs. Season with Salt and Pepper and toss to mix. Stuff the Tomatoes with the Tuna salad, mounding it slightly, and serve.
💡Tips
For a pungent kick, add chopped Capers.
