Zucchini Fritters

1 cup all-purpose Flour
1 tsp Salt
1 large whole Egg, plus 2 large Egg whites
1 tbsp Oil
1/2 cup Beer or Water
4 Zucchini (1 1/2 pounds total)
Salt and Pepper
3 tbsp all-purpose Flour
4 cups Oil for frying

🥣Instructions
1. Make the fritter batter: In a large bowl, whisk the Flour with the Salt, whole Egg, Egg whites, and Oil. Gradually whisk in the Beer or Water. The Batter should be slightly thicker than heavy cream. Use a little more Beer or Water if you prefer a lighter batter coating. Cover and let stand for 1 hour.
2. Grate the peeled zucchini using a food processor or with a cheese grater.
3. In a bowl, sprinkle the Zucchini with Salt and Pepper, then toss with the Flour, discarding the excess.
4. In a large skillet, heat the Oil to 375 degrees using a fork, dip the Zucchini slices one at a time in the batter. Gently drop them into the Oil without crowding. Fry the Zucchini, turning them once, until golden, 1 to 3 minutes total. Using a slotted spoon, transfer the fritters to paper towels to drain. Keep warm in a medium oven while frying the remaining zucchini. Season with Salt and serve very hot.
💡Tips
For this recipe, it’s not necessary to beat the whites to make the fritter batter.
Flouring the Zucchini slices helps the fritter batter stick to them.
Don’t crowd the Zucchini slices when frying them; they should have plenty of room in the skillet.
