Roasted Tomatoes
🛒Ingredients (Grocery List)
2 tbsp Butter, cut into1/4-inch dice, plus more for brushing
4 medium Tomatoes, halved horizontally and seeded
1/2 up shredded Gruyère or Swiss Cheese
2 Shallots, finely chopped
Chopped Parsley leaves
2 tbsp dry Breadcrumbs
Salt and Pepper

🥣Instructions
1. Preheat the oven to 350 degrees. Brush a gratin dish with Butter.
2. In a bowl, toss the Cheese with the Shallots, Parsley, and Breadcrumbs. Season with Salt and Pepper.
3. Arrange the Tomatoes (cut side up) in the gratin dish, packing them close together. Sprinkle the Cheese Crumbs over the top and dot with 2 tablespoons of Butter. Transfer them to the top shelf of the oven and bake for 20 to 25 minutes. Serve hot.
💡Tips
Roasting the Tomatoes on the top shelf of the oven allows them to brown nicely as they cook.
These Tomatoes are often served alongside pan-seared veal cutlets or chops. On a platter, surround the meat with the Tomatoes and some Potatoes chips, warmed in the oven.
