Classic Mornay Sauce

3 tbsp Butter
3 tbsp all-purpose Flour
2 cups Milk
1/2 cup shredded Gruyère or Swiss Cheese
Pepper

🥣Instructions
1. In a medium saucepan, melt the Butter over medium heat. Whisk in the Flour until it starts foaming. Whisk in the Milk. Season with Pepper. Bring to a boil, whisking, then reduce the heat to very low and cook for 5 to 10 minutes. Remove the pan from the heat and beat in the Cheese. Season carefully with Salt.
💡Tips
Once the Cheese is added, do not return the sauce to the heat.
Serve with white meats or, especially, poached or hard-boiled eggs, poached fish, or some boiled vegetables, including potatoes, cauliflower florets, boiled salad greens, spinach, or carrots.
Since the cheese has salt in it, taste the sauce after the cheese has been added before seasoning to see if additional salt as needed.
