Creamy Stuffed Hard-Boiled Eggs

4 large Eggs
Salt
Finely chopped Parsley leaves
Boston Lettuce leaves for garnishing optional
1 Large Egg Yolk
1 tsp Dijon Mustard
3/4 cup Vegetal Oil
1 tsp Vinegar
Salt and Pepper

🥣Instructions
1. In a small saucepan, cover the Eggs with cold Salted water. Bring to a boil, then cook the Eggs at a gentle boil for 10 minutes. Drain and run cold Water into the pan to make the Eggs easier to peel.
2. Meanwhile, make the Mayonnaise: In a small bowl, whisk the Egg Yolk with the Mustard. Blend in the Oil a few drops at a time to begin, then in a steady steam. Beat in the Vinegar and season with Salt and Pepper.
3. Peel the Eggs and halve them lengthwise. Carefully add 3 of the Yolks to the Mayonnaise. Transfer the remaining Yolk to another bowl. Mash the Yolks with the Mayonnaise and Parsley until smooth.
4. Carefully mound the filling in the Egg White halves. Grate the remaining Yolk over them. Line a platter with the lettuce, arrange the Eggs on top, and serve.
💡Tips
Have all the ingredients for the Mayonnaise at room temperature.
You can, of course, use store-bought Mayonnaise to make Eggs Mimosa.
This dish is best when prepared just before serving.
